Salmon & Vegetable Tray-Bake
Try this recipe for an omega-3, fibre and antioxidant packed mood booster
Serves 4
Ingredients:
4 salmon filets
2 red onions, cut into 8 wedges.
1 bunch broccolini
1 medium zucchini cut into cm rounds
1 yellow capsicum, sliced into 8ths
1 red capsicum, sliced into 8ths
1 tray cherry tomatoes on the vine, cut into small bunches
1 lemon, cut into quarters
Small pinch salt
1 tablespoon dried herbs ie oregano or thyme
3 tablespoons extra virgin olive oil
1/3 cup fresh parsley, roughly chopped
Method:
Pre-heat oven to 200’C
Toss all vegetables and lemon in olive oil and place all except the vine tomatoes in a large baking dish
Place tray in oven and roast for 20 mins
Remove from oven, turning vegetables. Place salmon filets and vine tomatoes into the tray, sprinkle tray with a small pinch of salt and dried herbs. Place back into oven for 20 minutes or until salmon flakes easily.
Sprinkle with chopped parsley and serve.
